This is not one of my THREEHUNDREDANDSIXTEEFIVE challenge T-shirts – but potentially, it could be. I came across The Mohawk Valley Trading Company online the other day and discovered that they are currently running a promotion involving free T-shirts (my favourite kind of T-shirts) and I thought I’d share the knowledge to my challenge fan base.

Next to honey, maple syrup is the most popular natural sweetener in North America and its production predates European colonisation. Early Native American societies in Canada and the northeastern United States collected maple sap from v-shaped notches they carved into maple trees. The sap was then concentrated by close contact with hot stones eventually becoming suitable for syrup.
Obviously a lot about the process has been adapted by today’s modern technology, but the taste is just as great. I remember my trip to America at the start of this year and deciding to try pancakes with syrup for breakfast for the first time. That was not a decision I regret, let me tell you.
